Our Story

Brian started “condo-brewing” in 2013 when a friend brought over a kit he got for Christmas. That was all it took, he was hooked. After starting off with classic styles like IPAs, APAs, and Saisons, he found and quickly fell in love with barrel-aged stouts and spontaneous fermented beers. That’s where the experimentation began. He took every opportunity to attend Goose Island BCBS meet ups where reps would talk about process. He would furiously take notes and head back to the lab to experiment. Being an extreme type of guy, he went straight for the biggest boldest stout he could create, and in that same extreme, he took his early experiments straight to the big players like Phil Wymore and Cory King for critical feedback. After a few painful reviews, the stout feedback began to tick in the right direction.

From Condo-Brewing to scale.

After a few stouts, DB Legacy and BA Heritage, gained some attention Brian found himself doing some collaboration brews with folks like Shaun Berns (RAM, More, Phase Three) and Aaron Hanson (Ellison), he crafted the idea of a full on barrel-aged stout club, Dimensions of Time Barrel Project and executed it through Ellison Brewing & Spirits. After the success of the project Brian did a few more collaborations and one in particular, Tail of Two Pitties with Timber Ales, landed him at Twelve Percent Beer Project as one of their main brands. Here he is doing the second installment of Dimensions of Time Barrel Project along with regular released brews, some that will be brewery only and some that will be distributed. Keep a look out.
