Four Horsemen

A Barrel-Aged stout collaboration between three breweries; Barclay Brewing, Watkins Brewing, and Ellision Brewing & Spirits

Three different stout recipes from three different brewers. We brewed the first batch and fermented with a very aggressive strain of yeast, San Diego Super Yeast. It took the ABV of the beer to the roof and left a rather dry and hot stout. We decided that we’d throw it in some Warehouse Liquors Store Pick bourbon barrels and see what would happen. Honestly, we weren't expecting much, but those barrels worked some magic. We tasted it at 24 months and it had transformed in such a great way. It was still hot, but it started to round out.

Meanwhile, Watkins and Ellison both brewed their recipes and sent them to barrels. Three years from the start of the project we blended all of them together to what is an incredibly nuanced, bold, and assertive stout. It’s one of the beers we’re most proud of.
